Nutrition Education Program
Many Wellspring Adventure campers have had numerous nutrition classes, met with a dietitian or two and are already familiar with the food pyramid, and talking about the importance of moderation.
So instead of trying to teach the same material again, the Adventure Camp’s unique nutrition education program focuses on what’s actually necessary for weight loss and weight control, according to scientific research. The Adventure Camp’s nutrition curriculum was developed at Wellspring Academy, formerly Academy of the Sierras, the famous year-round boarding school for weight loss, and Wellspring Adventure Camp’s sister program.

Wellspring Adventure Camp North Carolina’s nutrition education program helps you understand:
- When a diet does and does not have a scientific basis
- Scientific credentials – when to trust someone, and when someone is taking undue advantage of their doctor’s coat
- The fundamentals of the science of weight gain – why it’s so easy to gain, and so hard to lose
- What scientific research shows about weight loss
- What scientific research shows about successful long-term weight control
- Dissecting fad diets – finding some kernels of science, but mostly empty promises
- Restaurant training – training on ordering in restaurants followed by a trip to a restaurant
- Grocery store training – activities and exercises in grocery stores
Culinary Education Program
Wellspring Adventure Campers learn how to apply their nutrition training in culinary classes.
Culinary classes occur in the field, on camping trips, when campers learn to cook quick and healthful meals on Coleman stoves. Then, when campers return to camp, we pick up where we left off and apply the field lessons in the kitchen.
Wellspring Adventure campers learn to prepare very low-fat, high-enjoyment foods – not gourmet, but rather quick, practical dishes, like spaghetti with a fat-free marina sauce or a fat-free grilled cheese sandwich.
Wellspring Adventure campers return home with a new set of culinary tools and new confidence in their ability to prepare simple, very low-fat and low calorie-density meals and snacks.
